Sarah Cremona, Vue Group apprentice and finalist for this year’s Josephine Pignolet Young Chef of the Year Award, takes centre stage for September’s Dessert Degustation at Iki-jime.
"I wanted to recreate the classics with a Native Australian twist. There is so much incredible produce coming into the Spring season, so the menu showcases the very best of local suppliers."
Each dessert incorporates produce from Spurrell Foraging, winners of the 2019 Delicious Australia’s ‘From the Earth’ Award. Also on the menu is honey from Vyvian’s Honey – a Melbourne-based distributor of honey harvested straight from the frame.
